ઘઉં (Triticum spp.)[૧] એ વિશ્વભરમાં વાવવામાં આવતો ઘાસ પ્રકારનો પાક છે. ૨૦૦૭માં વિશ્વમાં ઘઉંનું ઉત્પાદન ૬.૦૭ કરોડ ટન (607 million tons) હતું, જે મકાઇ (maize) (૭.૮૪ કરોડ ટન,784 million tons) અને ચોખા (rice) (૬.૫૧ કરોડ ટન,651 million tons) પછીનું ત્રીજા ક્રમાંકે આવતું અનાજનું ઉત્પાદન છે.[૨] ઘઉં એ મુખ્ય ભોજન છે જે લોટ બનાવવા માટે વપરાય છે, તે ઉપરાંત તેના લોટમાં આથો લાવી અને બ્રેડ, બિસ્કુટ, કૂકિઝ, કેક, પાસ્તા, નૂડલ્સ વગેરે બનાવાય છે.[૩] ગુજરાતી ભોજનમાં ઘઉંનો ઉપયોગ મોટાભાગે રોટલી અને લાડુ તેમજ લાપસી જેવી વાનગીઓ બનાવવામાં કરાય છે. વિદેશોમાં અમુક જગ્યાએ તેમાં આથો લાવી અને બિયર જાતનો શરાબ [૪] આલ્કોહોલ, વોડકા જાતનો શરાબ,[૫] કે જૈવિક બળતણ.[૬] બનાવવામાં વપરાય છે. અમુક માત્રામાં આ પાકનું ઉત્પાદન પાલતુ ઢોર માટે ચારા તરીકે પણ કરાય છે, ક્યારેક તેનો ઉપયોગ છાપરૂં બાંધવામાં પણ કરવામાં આવે છે.[૭][૮]
જો કે ઘઉં વિશ્વની મોટાભાગની ખાદ્ય પ્રોટિન ખોરાકની આપૂર્તિ કરે છે, છતાં લગભગ દર ૧૦૦ કે ૨૦૦ એ એક માણસ 'સિલિક રોગ' (Celiac disease)થી પીડાય છે, આ પરિશ્થિતિ ઘઉંમાં મળતા 'ગ્લુટેન' નામક પ્રોટિન પ્રત્યે પ્રતિરક્ષા પ્રણાલીની પ્રતિક્રિયાને કારણે ઉદભવે છે (આંકડા યુ.એસ. માટેના છે). [૯][૧૦][૧૧]
